Chocolate Coconut Cookies

Sometimes we just feel like we want something sweet after a meal & these little miniature coconut biscuits do the job. They can also be dipped into chocolate and/or made into bars.

Serves 4

Ingredients:
140g dessicated coconut
3 egg whites
3 tbsp xylitol
1 tsp lime or lemon juice
1 tbsp cornflour
3 small squares of good quality dark chocolate (eg. Green & Blacks) (optional)

Method:

1. Mix the xylitol & lime/lemon juice together until the xylitol has dissolved.

2. Add the coconut, egg white & cornflour and mix well into a paste.

3. Divide into 12 walnut-sized balls & place onto a lined baking tray & flatten the balls slightly.

4. Bake at 180°C/350°F/Gas mark 4 for 10 minutes, then reduce heat to 150°C/350°F/Gas mark 2 for a further 5 minutes.

5. Remove from the oven & allow to cool.

6. (optional)
Melt the chocolate in a bowl inside a saucepan of water and then dip the bottom of each cookie into the chocolate & turn upside down onto a plate. Chill in the fridge to set.

Alternatively, you can drizzle the chocolate over the tops of each cookie.

These can also be made into bars instead of cookies.
