Cauliflower Rice
As we age, women need to be more mindful of reducing their intake of simple carbohydrates. This is because changes in our hormones increase our risk of developing metabolic disorders, leading to weight gain, inflammation & increased cholesterol/blood pressure.
But we can make simple swaps that won’t spike our blood sugar but do leave us feeling satisfied.
One of these options is cauliflower rice – its tasty, filling & really easy to make.
Serves 4
1 cauliflower
1-2 tbsp coconut/olive oil
salt/pepper/fresh herbs
1. To make the cauliflower resemble rice, you can either use a box grater with the medium-size holes traditionally used for cheese, or a food processor with the grater blade to blitz it into small pieces. With both techniques, you’re aiming for little pieces the size of rice.
2. If your ‘rice’ seems to contain excess moisture, transfer it to a large paper towel or absorbent dish towel and squeeze/press to remove any remaining water. This ensures no excess moisture remains, which can make your rice soggy.
3. To cook, heat the oil in a large frying/saucepan & add the cauliflower. Use a lid to cover, so the cauliflower steams and becomes tender. Cook for a total of approximately 5 minutes, stirring occasionally, then season as desired – with salt, pepper or fresh herbs.
