Individual Berry Cheesecake
This lovely tart dessert uses chopped nuts/fruit instead of biscuits for less impact on blood sugar. Using lovely in-season berries providing antioxidants, walnuts providing omega-3s & apricots for a bit of dietary fibre.
It’s easy to prepare & can be made in advance.
Serves 2
Ingredients:
FOR THE BASE:
40g chopped walnuts or pecans (use other nuts if preferred)
6 dried apricots
FOR THE CHEESE:
200g plain cream cheese
2 tbsp lemon juice
Zest of 1/2 lemon
3 tsp xylitol
FOR THE TOPPING:
2 tbsp fresh berries (raspberries, blueberries or blackberries)
Method:
1. Place nuts & apricots in a small blender & process until broken into small pieces. Press into the bottom of 2 ramekin dishes & chill.
2. In a bowl, add the lemon juice to the xylitol & stir to allow the granules to dissolve.
3. Mix the dissolved xylitol & lemon juice & zest into the cream cheese until smooth & thoroughly combined, then spoon into the prepared ramekins.
4. Scatter the berries on the top of each ramekin & chill until ready to serve.
NB: remember that xylitol can be dangerous to dogs, so never leave it lying around & clean up any spillage immediately.
