Brazil Nut Crusted Salmon
Supporting your thyroid health in perimenopause/menopause is important due to its role in supporting the liver to break down and eliminate oestrogen.
This recipe uses Brazil nuts which are rich in selenium, providing cofactors for thyroid function enzymes. In addition, the salmon provides essential fatty acids which help to improve the health of cell membranes & support the receptors for thyroid hormones.
Serves 2
4 Brazil nuts, ground/blended
1.5 tbsp oats, coarsely ground/blended
1⁄2 tsp dried basil
1⁄2 tsp dried oregano
1⁄2 tsp dried rosemary
1⁄2 garlic clove, crushed
1 lemon, zested & then cut into wedges
1-2 tbsp olive oil
Sea salt and black pepper
2 wild salmon fillets
- Preheat the oven to 190C & line a baking tray with parchment paper.
- Combine the ground Brazil nuts, oats, herbs, garlic, lemon zest & olive oil
in a bowl to make the crust topping. Season with sea salt &
black pepper. - Place the salmon on the prepared baking tray, flesh side up & spread the
topping mixture over the fillets. - Roast in the oven for 10-12 mins or until the crust is golden brown & the
salmon is cooked through to your liking. - Serve with a wedge of lemon & half a plate of your favourite steamed
greens e.g. broccoli & green beans.
